Roasted Acorn Squash

Save for your next dinner party! A delicious side dish for any meal, these roasted acorn squash slices satisfy your sweet tooth in a way you didn’t know squash could!! One of my favorite tips for satisfying cravings in a healthy way is to lean into nature's sweets with foods like squash, caramelized onions, roasted carrots etc


Prep Time: 20 minutes

Cook Time: 25 minutes

Total: 45 minutes


Ingredients

2 Acorn Squash

¼ Cup EVOO

1 Cup Parmesan or Nutritional Yeast

1t Garlic Powder

½ t Sea Salt

½ t Dried Basil

½ t Dried Thyme

½ t Dried Oregano


Method

  1. Preheat oven to 425F/220C. 

  2. Slice squash in half and scoop out seeds with a spoon. Then slice each half into slices around 1inch thick. 

  3. Add squash to a large mixing bowl and add remaining ingredients. 

  4. Toss together until well coated. 

  5. Place the squash slices on parchment-lined baking tray and if there’s extra herb mixture in the bowl, just press it into the top of the slices. 

  6. Bake for 20-25 minutes until soft and golden on top.
