Roasted Acorn Squash

One of my favorite tips for satisfying cravings in a healthy way is to lean into nature's sweets with foods like squash, caramelized onions, roasted carrots etc

Ingredients
2 Acorn Squash
¼ Cup EVOO
1 Cup Parmesan or Nutritional Yeast
1t Garlic Powder
½ t Sea Salt
½ t Dried Basil
½ t Dried Thyme
½ t Dried Oregano
Method
Preheat oven to 425F/220C.
Slice squash in half and scoop out seeds with a spoon. Then slice each half into slices around 1inch thick.
Add squash to a large mixing bowl and add remaining ingredients.
Toss together until well coated.
Place the squash slices on parchment-lined baking tray and if there’s extra herb mixture in the bowl, just press it into the top of the slices.
Bake for 20-25 minutes until soft and golden on top.
