1 Pot Vegan Sweet Potato Curry

Okay, I’ll be honest, curry is not generally one of my favorite foods. However, this recipe is the perfect hearty dinner to warm you up on a cold winter day. Plus, it’s packed with hormone healing nutrients like cauliflower, turmeric,coconut milk, and chickpeas for a protein kick! The fact that it’s absolutely delicious is just an added bonus…


Prep Time: 20 minutes

Cook Time: 40 minutes

Total: 1 hour [unless prepped ahead of time]


Ingredients

2T EVOO

2 Cups Cauliflower, Chopped into Florets

1 Sweet Pot, Cubed

2 Bell Peppers, Chopped

½ White Onion, Chopped

1 Can Chickpeas, Drained

2t Curry Powder

1/2t Turmeric 

4 Cups of Veggie Broth, MSG Free

1 Cup Coconut Milk

1 Cup Fresh Spinach

Pinch Black Pepper

Method

  1. Add oil to large pan on medium high heat. Pour in cauliflower, sweet pots, bell peppers, white onion, chickpeas, and spices.

  2. Then, add veggie broth to pot until it covers the ingredients, bring to a boil and stir occasionally. 

  3. After 20 min, stir in coconut milk and cook for another 10 minutes. 

  4. Mix in spinach and stir until wilted. 

  5. Serve hot on its own or over rice!!
