Easy Red Lentil Soup

I simply love soup season! But the truth is that the reason I came to love this recipe had nothing to do with fall. I was on my birth control cleanse and had just had my wisdom teeth removed (not ideal, 0/10 recommend to a friend). 

I was desperate for nutrient-dense liquids that I could swallow easily while still giving me enough protein. This soup not only fit the bill thanks to the protein-packed lentils, but the turmeric is also a powerful anti-inflammatory addition that aided both my healing wounds and my hormones. 

The best part? You dont even need to soak the lentils, so it literally takes a total of 15 minutes to throw together!


Prep Time: 15 minutes

Cook Time: 30 minutes

Total: 45 minutes


Ingredients

1T EVOO

1 Onion, Chopped

4 Medium Carrots, Chopped

1 Cup Dried Red Lentils, Uncooked

4 Cups Veggie Broth, MSG Free (use only 1T of stock powder for all 4 cups)

½ Cup Almond Milk

1t Ground Cumin

1T Turmeric


Method

  1. Heat the oil in a large pot over a medium heat. Add the onion and cook for 3 minutes until softened.

  2. Stir in the carrots, lentils, stock, milk and cumin, then bring to a boil.

  3. Reduce the heat and simmer for 30 minutes or until the lentils are cooked.

  4. Puree with a hand held blender or food processor. Add more water to thin, if desired.

  5. Ladle the soup into bowls and optionally serve with chopped fresh parsley and mixed seeds.
