Hormone Happy Nourish Bowl

Give your hormones some much-needed nourishment, with this easy to prep bowl. Nourish bowls are one of my favorite ways to have a nutrient-dense lunch one those super busy days. You can prep ahead almost every step of this bowl, so when the time comes it’s just a matter of throwing everything together and you’re all set!


Prep Time: 20 minutes

Cook Time: 40 minutes

Total: 1 hour [unless prepped ahead of time]


Ingredients

1 Avocado

½ Cup Brown or Wild Rice

½ Sweet Potato

1 Cup Roasted chickpeas

1 Beetroot, Sliced

1 Cup Spinach

½ Cup mushrooms

½ Cucumber, Sliced

¼ Cup Cooked Edamame

1T Pickled Onions

Dressing:

3T Olive Oil

2T Balsamic Vinegar

1T Tahini

1t Dijon Mustard


Method

  1. Preheat oven to 200C/400F and cube sweet potatoes. Place sweet potatoes and chickpeas on parchment sheet, drizzle with EVOO and sprinkle with salt. Place in oven for 40 minutes

  2. Cook rice according to package instructions.

  3. Heat EVOO in a pan and sauté spinach and mushrooms until soft.

  4. Slice rest of vegetables

  5. Whisk dressing ingredients together.

  6. Place rice in a bowl and arrange vegetables

  7. Drizzle dressing and enjoy!



    Note: Best served hot but you can store cooked and chopped ingredients separately for an easy meal prep solution!
