Healthy Creamy Pesto Pasta [vegan]

Bring the Mediterranean to your dining room table with this pesto flavored creamy pasta dish that packs a nutrient punch. Healthy fats and protein are the building blocks of your hormones and this pasta recipe is rich in both! It’s honestly a top 10 on my dinner rotations because it’s so nourishing while still giving me the comfort food feel that I sometimes just need.

Ingredients

Pesto: 

2 Cups Basil Leaves 

3 Cloves Garlic 

2T Nutritional Yeast 

1/4 Cup Pine Nuts or Walnuts 

1/2T Salt 

1/2 Cup EVOO 

2t Lemon Juice 

Sauce: 

2 Cups Plant-Based Milk 

3t Cornstarch 

1t Salt 

1T Nutritional Yeast 

1/4 Cup Prepared Pesto 

2 Cups Pasta

Method

  1. Prepare your pasta of choice and drain. 

  2. Blend all pesto ingredients into a food processor until smooth. 

  3. Add all the sauce ingredients into the food processor with the pesto. 

  4. Once blended, pour over drained and rinsed pasta, mix well, and serve hot.
